This is my all-time favorite Almond meal. It is just pure ground almonds, not blanched. It has a hearty flavor and texture that makes for delicious and healthy treats.

On the internet I read that the nut hull is highly nutritious--so I was keen to buy unblanched almond meal. Usually the store-bought "almond flour" is totally sanitized and you hardly taste the flavor of almonds. In contrast, Anthony's Almond Meal tastes incredible--so sweet. I never knew how good almonds taste until I bought this stuff. So for the Keto guy the sweetness pointed to a slight problem; however, I learned that the sweetness is not from a high sugar content, but rather the absence of bitterness because a bitter compound, amygdalin, was eliminated by the cultivators.So I add this almond flour to high-fat organic yogurt together with cocoa powder and nibs and wild blueberries, and you won't upset the Keto sugar balance. Also I highly recommend that you ferment in Kombucha the almond meal (or other seed / nut powders like chia seeds, walnut flour) and let it sit for a few days. I make my own Kombucha brew and then add carrot and beet juice for added nutrition. Other possible additives are bee pollen, amla powder, etc. Fermentation increases the nutritive value and absorbability of every food. Good health doesn't come easy--you need exercise, intermittent fasting, good nutrition.
