It is neither an organic nor a genetically modified organism (non-GMO).
Don't buy it. The information on the bottle and the ingredients are misleading.

Amazing flavor but very bad product delivery.
The sauce itself is amazing and I have bought it several times in the past. The flavor is easily a 5/5 rating. However, the reason why I have given it a low rating here is because the bottle that they sent me expires this month. This batch was produced in October 2021. Very poor inventory and delivery choice. Extremely disappointed.

Disappointing. Based on the product description, I was expecting a natural soy sauce without any flavor enhancers or preservatives. Unfortunately, this has both.
